Beef schnitzel, fried until it crackles.

It comes with truffle-seasoned potato purée, a peppered chicken gravy and zesty broccolini: rich and savory first, then something green and bright to cut through it. The truffle stays in the purée, and the broccolini keeps the whole plate from getting heavy.

Seared trout, seasoned with chicken of the woods mushroom ground to a fine powder. It gives the fish a savory, woodsy edge.

Served with Israeli couscous made bright with puréed pimento: sweet pepper against mushroom, and a mild fish that carries both.

This is our catch of the week, the same fish all weekend. In Shirley’s dining room tonight through Saturday, while supplies last.

A 14-ounce New York strip, finished with smoked bacon sea salt.

It arrives with a smoked Gouda sweet potato au gratin and our house-made wh***ey onion gravy. Smoke on smoke, softened by the sweet potato. A plate built for a cool October night.
