Bar Caviar (256 S. 16th St.): Opening in early October in the Dwight D Hotel in Rittenhouse, this bar will pair caviar and seafood with 50 varieties of Ch*****ne and a full w**e program in a setting that’s more neighborhood than hushed luxury lounge. Executive chef Greg Vassos’ contemporary American menu, informed by classical French technique and Japanese precision, will feature raw-bar selections, caviar-focused dishes, and seasonal small plates. The restaurant also will operate Parallel, a caviar program emphasizing careful sourcing and extended maturation. In 2027, Vassos plans to follow with Fall Line, a Mid-Atlantic-focused tasting-menu restaurant.
