We saved the closest story for last. This one is about the building Audubon's is in.

The Palace Bar opened here in 1903, and the City Hotel followed a year later, with rooms upstairs for salesmen, river men and families passing through. The building came back from fires in 1956 and 1961, and one night the first television in the county glowed inside these walls.

A hotel collects guests, and the staff say some never quite checked out. A room key found on the bar in the morning that nobody remembers handing out. A bed upstairs made up tight with no one booked in it. A man's laugh from the old barroom after close, with every chair up on the tables.

Course V is a warm chocolate tart with bourbon caramel, Missouri pecan, crème fraîche and sea salt, with a neat pour of Ben Holladay Missouri bourbon.

Tomorrow, 6:30 PM, downstairs in The Midnight Slip. 40 seats.

Dr. Lewis F. Linn stayed in Ste. Genevieve when cholera came and went house to house. Later, as a U.S. senator, he pushed so hard for the Oregon Territory they called him the Father of Oregon. He died at 47 and was buried here.

In 1905 the town moved him to a better resting place, and a wild cherry tree grew over the new grave. The workmen said it wept, sap running off the branches onto their hats and down their collars, sticky and warm even in the cold. In 1938 they moved him back, and the stories say the tree stopped weeping.

Course IV is pork schnitzel, spaetzle, c***r-mustard and roasted apple, with StilL 630 Knowledge of Good Apple Brandy.

After the flood of 1785, Ste. Genevieve moved uphill to where Audubon's stands now. Then the cholera summers came up the river on the boats. A man could eat breakfast healthy and be in the ground by supper.

Somebody had to keep cooking. As the story goes, that was Madame Shoulse, who lived to a hundred and five. She kept a dark roux going on the back of her stove, and when a house went quiet with sickness, a bowl showed up on the step.

Old cooks here say if you walk away from a roux late at night, you might come back to find the spoon moved, handle pointed at you.

Course III is dark-roux gumbo with local chicken and Oberle andouille, and Nobletons agricole-style rum, neat, with orange peel.

Two blocks from Audubon's, at Fourth and Merchant, Jacques Guibourd built his house in 1806 with heavy timbers set upright, the old French way.

People who've visited say the house has company. Three little old men in long coats, seen at the edge of a room until you turn your head. Quick footsteps in the servants' quarters that stop when you open the door. A few notes from a harpsichord somewhere in the house, like someone checking it's still in tune.

Course II takes its name from that corner: Audubon's signature salad and a French 75 with StilL 630 Confluence gin, lemon and Missouri sparkling w**e.

Friday, October 30, 6:30 PM. 40 seats only!
