Pike Place Market has been open since August 1907. Sixty-four years later, it was nearly torn down.

What saved it wasn't a developer or a grant. In November 1971, Seattle residents voted to create a seven-acre historical district and a commission to protect it — not just the buildings, but the life inside them. The city's own description calls the market the soul of Seattle.

The door opening is the part guests remember. It isn't where the work is.

A stay can begin days earlier, with a call asking what should be in the kitchen when you arrive. Beds turned down. Flowers cut. Everything finished before anyone rings the bell.

What follows is the quieter part — a concierge when you want one, and nothing left for you to manage. Hosting, done properly, is mostly invisible. You notice it only in what never comes up: no lockbox puzzle, no missing towels, no one to chase.

Most of Lima happens in Miraflores. The cliffs, the long lunches, the ocean air — it's a good place to stay, and most visitors never leave it.

It's worth leaving for an afternoon. The city Francisco Pizarro founded in 1535 is still standing, and it has been on the UNESCO World Heritage list since 1988. Closed "box" balconies lean out over the streets, and UNESCO calls the convent of San Francisco an outstanding example of a colonial convent ensemble in Latin America.

Most itineraries treat Tahiti as a doorway. You land, cross Pape'ete, and board something else.

But Tahiti is two islands. The isthmus of Taravao joins Tahiti Nui, which holds the capital and the airport, to Tahiti Iti: volcanic, mountainous and untamed, far from the bustle of the city. It is known as Fenua Aihere, the bushland.

Staying on the island instead of passing through it turns the arrival day into part of the trip.

Eight chains of peaks ring a crater nine kilometers wide at the heart of the island, with pineapple plantations growing inside it. The lagoon everyone knows is the edge of that shape, not the whole of it.

San Francisco's warmest weeks don't come in July.

From June through August, a marine layer rolls in off the Pacific and keeps the coast cool and gray. On plenty of summer mornings, the Golden Gate simply disappears. Locals pack a jacket for July.

Then the fog pulls back. September and October are usually the warmest, clearest weeks of the year on the coast.

Here's a number that surprises most visitors: Seattle gets less rain in a year than New York City.

What it has is frequency. Rain falls on about 150 days a year, mostly as light drizzle, and roughly half of it arrives between November and January. Summers are remarkably dry.

So plan for gray, not for storms. Choose a home with big windows, a fireplace and a kitchen worth staying in, keep a light rain jacket by the door, and the weather becomes part of the stay rather than something to wait out.

The layover everyone extends.

Most itineraries treat Lima as a formality: land, sleep, fly to Cusco in the morning. Then someone eats in Barranco or Miraflores, and the flight gets moved back a day. Then two.

It's easy to see why. This is one of the best restaurant cities on the continent, built into a coastline of cliffs and surf breaks most visitors never planned to see. Barranco's bohemian streets run into the Miraflores Malecón, and the ocean stays part of the view, even from a dinner table.

Most listings promise a fast reply. Few will tell you what fast actually means. Ours does: any message, in any of nine languages, answered by a real person in under two minutes, at any hour of the night.

It sounds like a small number. It does a lot of quiet work. A misplaced key at midnight, a restaurant question before dinner, a question about the pool heater at sunrise - each one reaches someone who can actually answer it, not a queue. The owner hears about the problems that matter. Never the ones that don't.

Guest experience was never really about the amenities list. It's about how fast the truth gets to whoever's asking.
