It's been over a week ago, but we can't stop smiling about this year's Bedford County Tennessee Fair Farm to Table event at Vanetta Farm! People who like to cook like us DREAM about being handed fresh-from-the-farm local produce and meat and dairy and bread and turning it into a hearty meal for others. The small local producers ALL showed up and showed out with their products!
Butcher’s choice steak cuts from Potts Meat Processing - these were absolutely amazing cuts of meat that worked out so well on our open fire and then skewered with veggies. Denver Steak, Teres Major, Skirt Steak and Sirloin....if you haven't tried these cuts from Potts, go get you some for your next cook-out! So much tastier than grocery store meat!
Pork tenderloin, chicken, veggies, berries and more from RC Farms- The pork was tender and full of taste, gorgeous on the skewers and a joy on the tongue with our glaze. The chicken! Meaty pieces of
chicken thigh that needed very little seasoning to make people exclaim that it might be the best chicken they ever tasted! RC Farms veggies were picture-perfect. The red potatoes and zucchini for the Bourecki!!!! Prettiest potatoes we've ever had the pleasure to work with. Stay tuned for the Bourecki recipe! ALL of RC farm produce was off the scale big and beautiful. We pickled some gorgeous veggies for appetizers and used their lovely onions and garlic in several of the dishes. ...and their berries!!! Absolutely gorgeous strawberries and blueberries for the salad and dessert. These berries were large, sweet and juicy. You could tell they were freshly picked and grown with love!(You can get their products directly from their farm north of Shelbyville, at various markets including the Hidden Gem Farmer's Market, and online through platforms like Market Wagon for local delivery).
Ground beef from Vannatta Farms for meatball appetizers with Barking Pig glaze- this ground beef was heavenly!
Rabbit from Hustons Hoppity Heaven- we smoked these rabbits on our rotisserie smoker and then added the rich meat to cheeses and seasonings, put it into jalapeno halves, wrapped it in bacon and people went crazy for this appetizer! Who knew rabbit tasted so good?!?!
Farm fresh eggs from Golden Gaits Farm- this is our farm in Flat Creek. We sell our colorful eggs by the dozen at Lynchburg Veterinary Hospital and off the farm. We made our secret recipe devilled eggs for the Farm to Table event and there were none left!
Fresh artisan sourdough by The Farmstand at Raus-baskets full of this palate-warming bread were on the tables for guests to slather in butter...and we also used the bread crumbs in the meatballs. We took a couple loaves to make croutons for the salad! Visit their farmstand at 3701 Hway 139 Tullahoma.
Lettuce, Shiitake mushrooms and amazing radishes from Belle Fleur Farm Fleur Farm. Once again, they provided the prettiest, freshest, cleanest lettuce we've ever worked with. Such a lovely variety of lettuce that would have been delicious by itself! The clean and very large mushrooms were grilled on skewers and served with the beef and added an extra WOW factor with their rich beefy umami. The radishes were large and mildly spicy and added a nice zing to the salad. You can find them at several regional Farmers Markets, including the Murfreesboro and Franklin Farmer's Markets.
Cheese from Flowers Creamery- If you think the best cheese is made in Wisconsin, you need to try their cheeses! They provided several creamy, mouth-watering flavors for the appetizers and the Bourecki. They stay busy producing the best dairy products from their Jersey and Holstein herds right here in Tennessee! Follow them on FB!
Handcrafted sourdough cookies by Pecan Sage Co.- These were gobbled up quickly with the berry parfaits after the meal. They've got a farm stand at 557 Minkslide Rd near Bell Buckle half of the week, and attend several local farmers markets. See their delightful page!
Limelight Marquee provided the tablecloths and dinner plates for the evening and Kevin “the Barrel Man” Sanders for donated whiskey barrels and half barrel planters and more.
Finally, Woodard's Market & Deli in Lynchburg provided the most amazing thick-sliced ribeyes that we grilled for the Youth Volunteers at the end of the night. We love Woodard's meat, especially their ribeyes, and these were particularly nice!
We are so thankful that we live in an area that has amazing local, generous producers like these. We encourage you to follow their pages and try their products. Gratitude goes to the Bedford County Fair board members also, who spend a lot of time planning, organizing and executing this extraordinary event!
Special thanks also to our dear friends who come help us out year after year: Ronnie Ribeye - American Griller, Duane Regynski, 931 BBQ (Michael Underwood), and Bart Morton!
