For five decades, Blackberry Farm has welcomed guests to the table with a spirit of Southern hospitality and a deep reverence for the land that guides us. With fresh garden harvests, handmade preserves tucked away for Winter, long dinners shared in The Barn and recipes inspired by the foothills of the Great Smoky Mountains, our food has always been a grounding point in our story.

Our kitchens have always celebrated the beauty of Appalachia through thoughtful ingredients, refined techniques and heartfelt hospitality. From incredible guest chefs to the amazing culinary talents in our own kitchens, the food story here is woven with inspiration from many remarkable hands. The vision of past culinary leaders laid the foundation, but today’s chefs, Cassidee Dabney, Trevor Iaconis, Josh Feathers and Sean Miller, continue to define what Blackberry Farm dining means for a new generation.

On this week’s episode of The Blackberry Podcast, Allan Benton shares that his goal all along was simply to make delicious ham and bacon. He certainly succeeded, and we’re thankful for it! Allan Benton is the celebrated ham producer behind Benton’s Smoky Mountain Country Hams which he grew a small backyard operation into a nationwide favorite, shipping his smoked hams and bacon from Madisonville, Tennessee, to some of the most popular restaurants in the country. Allan is joined by his son, Darrell Benton, who left his career in medicine to return to the family business and continue the Benton legacy. This episode also welcomes our first guest host! Cassidee Dabney, executive chef of The Barn at Blackberry Farm, joins Sarah Chabot to interview the Bentons and share her own origin story with Benton’s ham, which is a staple in the Blackberry kitchens.

There is a deep sense of place woven into every meal at Blackberry Farm. Featured in Travel + Leisure, Executive Chef Cassidee Dabney highlights the enduring beauty of Appalachian heirloom beans, ingredients that reflect the richness of the Great Smoky Mountains and the generations who have cultivated them with intention and pride. From seed-saving efforts led by Master Gardener John Coykendall to Cassidee’s thoughtful approach in the kitchen at The Barn, the article beautifully captures how the culture and flavors of the Smokies continue to shape the plates served at our tables. Creating plant-rich dishes and using ingredients mindfully is part of Cassidee’s support of Relais & Châteaux and Slow Food’s “Plant the Future” initiative. Embracing the versatility of legumes is one of the ways she and John both share their passion for local traditions and encourage sustainability.
