The rooftops rest gently against the mountainside, blending into nature as if they have always belonged here. Throughout the construction process, we did our best to preserve the old trees and design around the natural landscape that already existed.

And we realized — anything that flows with nature always carries its own kind of beauty. That is why concrete was minimized as much as possible, making room for bamboo, wood, and natural materials to create a stay that feels warm, peaceful, and deeply connected to the surroundings.

Why did we choose the name “Gáo” for our restaurant?

Gáo is a wild tree that grows abundantly in Ninh Bình. Its fruit carries a gentle sourness, and for generations, local people have used it to braise fish — creating a rich, flavorful dish without any fishy taste.

We chose the name “Gáo” as a way to preserve the soul of Vietnamese cuisine — rustic, delicate, and deeply rooted in tradition. Through every dish, we hope to bring Vietnamese flavors closer to travelers and elevate the beauty of local cuisine with care and refinement.

At the same time, we thoughtfully blend familiar and balanced flavors so that every guest, from anywhere in the world, can enjoy Vietnamese food in a way that feels both exciting and comforting.
