At Auberge Clermont, life follows the quiet rhythm of the land.
Under the recent full moon, we wandered through the olive grove and chose to let nature tell us when the harvest should begin. Rather than rushing the season, we listened — to the trees, the light, and the gentle cues of the orchard itself.
In the video, we meander through the grove as if on a quiet, purposeful search, seeking the first ready fruit and discovering our Leccino olives waiting patiently for their moment. Over the coming weeks, we will harvest in small, careful batches as our Frantoio — the heart of the grove — ripens in its own time.
By harvesting this way, our oil will carry the full expression of the olive, from bright, green notes to deeper, rounded flavours. A true reflection of the season, the moon, and the land our guests get to call home, even if only for a little while.
