Today is our Kewpie style Japanese mayonnaise production day. Filling orders for our local customers - QP mayonnaise, which is the base of the other 3 popular sauces: Black Garlic mayonnaise, Fennel Pollen & Juniper Berry mayonnaise and Serendipity Secret Sauce. The Secret Sauce also contains tomato pulp, horseradish, our Worcester sauce, chilli, smoked paprika, black pepper and fresh onion pulp.

75kg of koji aged course ground beef 80/20, a must try and so so good for burger patties, no adding salt or pepper or any condiments
Its that good that one of our customers moves between 80kg and 100kg per week in season, and 40kg to 60kg off season. What is the science behind Koji (Appergillus oryzae) in aging meat. There are 3x enzymes present in Koji namely Proteases that break down proteins into amino acids, creating savoury umami ( glutamate) then there is Amylases that convert starches into simple sugars adding a unique sweetness and then there is lipase that breaks down fats into free fatty acids adding to more flavour the end result is a juicy course ground texture with enhanced flavour

The entire western border of our property from the low bridge to the white bridge is the Keisie river, which was very kind to us again. Since the bridges were modified with large diameter pipes to help water flow and lifted by 40 cm we have experienced good water levels in the river no matter how much it rains truly blessed and full of gratitude 🙏
