For Gavin, General Manager at Kruger Shalati, it lives alongside every welcome, every conversation, and every moment spent ensuring guests feel at home. His days may be filled with hosting, leading teams, and keeping the train running smoothly, but the role that matters most begins long before and continues long after the workday ends.

In the eyes of his daughters, however, their dad’s job is much simpler: he’s a train conductor. The man in charge of a train, greeting people and making sure everyone is having a good time. Trackside Dining continues in Chapter 3 - a celebration of seasonality, fire, smoke, and flame.
An open-fire cooking experience where generosity and authenticity guide every dish, and nothing is rushed. Slow-cooked over different types of fire and traditional equipment, each element is prepared with patience - allowing bold, smoky flavours to deepen naturally over time.
This is South African cooking at its most honest: unpretentious, deeply rooted, and made to be shared. The crackle of flames, the scent of smoke in the air, cast iron blackened by fire, and plates filled with food that speaks of tradition, comfort, and place.
