A taste of the coast has arrived at Careys Manor. 🦞🌊

To celebrate our partnership with the Lymington Seafood Festival and its 10th anniversary, our Pastry Chef Ben has created a limited-edition Afternoon Tea inspired by the flavours and spirit of the sea.

Discover handcrafted sweet treats including vanilla madeleines, chocolate sea shells, sea salt fudge and white chocolate mousse lobster tails, alongside coastal-inspired savoury bites such as smoked salmon and horseradish on sourdough and prawn Marie Rose vol-au-vents.

Are you a wiz in the kitchen? This is your last chance to enter the Big Careys Cook Off at the Lymington Seafood Festival. 🧑‍🍳🦞

To enter, submit pictures of your best culinary creation and be in the chance of winning prizes worth over £850 and be crowned the festival’s Cook Off Champion!

Lobster Prep with Cambium Head Chef Dylan James 🦞

In collaboration with theLymington Seafood Festivall , Dylan shares his expert tips on preparing and presenting lobster with confidence at home.

This lobster has been cooked for six minutes before the tail and claws are removed. The tail is then filled with a prawn mousse, lightly poached, sliced, and served with a rich shellfish bouillabaisse sauce, finished with the claw on top.

A refined dish that celebrates the very best of fresh seafood and classic technique.
