No fake meat, no shortcuts — just honest, beautiful produce cooked with care. I’ve always loved ratatouille, and this dish brings all those rich, sun‑soaked flavours together in a way that feels both nostalgic and elevated. A guest mentioned ratatouille to us recently… so we took that as a sign. Here it is:
✨ Ratatouille‑stuffed pepper
✨ Confit potato
✨ Carrot‑top pesto
✨ Vegan feta
✨ Tomato, olive and balsamic dressing

A lighter spin on a classic left the pass last night: sticky toffee pudding with warm toffee sauce, custard, and salted caramel ice cream.
Not the dense traditional style — this one is softer, airier, and lets the sauces shine. Comforting, but still refined.

People often ask what we normally eat — and most days it’s something simple, healthy and quick between looking after guests.
But tonight was our first night off in quite a while, so we treated ourselves to the opposite.
A proper spread, cooked just for us, and the perfect chance to try out our new XO sauce alongside a bowl of our housemade kimchi.
