Update, musings and job vacancies!
Good peeps, a little update! We are well over 2/3 into this and hoping to be ready for a soft, gentle launch in October. It’s been fun! The Bothies obvs continue to sparkle - although I did see some wild dining possible one night stays in June and even one 2 night mid-week stay free. WTAH?

Nomenclature ain’t easy! What will we actually be?! Fundamentally: Inverlonan! We are ‘of the hill’. We will be bringing the Bothy Experience into the steading: A soulful, authentic, immersive guest experience embedded in this stunning landscape. An elevated Bothy Experience. A unique, ‘landscape hotel’ and restaurant.
As you know we have a stunningly tight, egalitarian and excellent core team - Tim, Dee and Meri. We have added the magnificent Issy to oversee the party. We have added Alice to lead the garden, with the vicar continuing to sprinkle the veggie, angel-dust behind her. Kieran and Phil build and fill and make things work! Norman herds the sheep and cows with true Scottish charm AND we will have full organic status over the whole farm and gardens in September. Love them. Love it!
We will remain - and need to remain - a small tight team, dedicated to Inverlonan with everyone being committed and willing- if needed- to step in, up or sideways!
is a phenomenally good chef. He will be running the restaurant like a calm, skilled grown-up. Wood cooking. Single sitting. 24 covers max. 8 course set menu. Daily changing subject to season blah.. Mostly our veg our meat our forage plus the sea! Doing what we’re doing now! It don’t need fixed.
But Tim needs help. We need a senior sous - ideally with a partner who also wants to get stuck in somewhere here. In short, looking for: 2+ years Michelin-level experience, bread, butchery, forage, preserves, ideally wood cooking experience but… we can all burn stuff. Bloody nice new flat with views available. Will pay!
