Today we’re making Linguine alla Nerano, one of the most iconic dishes from Italy’s Amalfi Coast. 🍝💚
Simple ingredients, authentic flavors, and a creamy texture that captures the essence of the Mediterranean.
📌 Ingredients:
• 400 g linguine
• 4 zucchini, thinly sliced
• 150 g grated Pecorino cheese
• Fresh basil
• Extra virgin olive oil
• Salt and black pepper to taste
👨🍳 Method:
1️⃣ Slice the zucchini into thin rounds and fry them in extra virgin olive oil until golden.
2️⃣ Cook the linguine in plenty of salted boiling water.
3️⃣ Reserve a cup of the pasta water and drain the pasta al dente.
4️⃣ Combine the zucchini and linguine in a large pan.
5️⃣ Add the grated Pecorino and gradually stir in the pasta water until a smooth, creamy sauce forms.
6️⃣ Finish with fresh basil and freshly ground black pepper.
